Saratoga Springs, NY - Erik A. Dybowski passed away unexpectedly on November 23rd at his residence in Saratoga Springs. He was 32 years old. Erik was born on May 15,1990 to Virginia Hays and Brian Dybowski.
Erik graduated from Saratoga Springs High school in 2008 and attended ACC. From there he followed his passion for cooking working in local restaurants, starting with the Wine Bar at the age of 15. He took great pride in his kitchen responsibilities with focus on providing a superior dining experience for patrons while delivering the utmost customer service. He recently "retired" from cooking when the pandemic occurred and was currently working toward a butcher apprenticeship at Market 32 in Saratoga.
Other than his love for the restaurant business Erik's real passion was his bike riding. He rode his Trek bike all over the city daily and insisted on riding his bike even throughout the winter season. Erik considered his bike an extension of his body and never went anywhere without it. He even completed a two week bike trek through the Northeast which took him through multiple states. He also enjoyed the outdoors and regularly visited his father's camp where he liked to go hiking, snowmobiling fishing and hunting. He also loved music and he enjoyed attending concerts and music festivals. He was a self-taught drummer and was totally at peace when he was playing them.
Survivors include his father Brian Dybowski, mother Virginia Hays, stepfather Tim Hays, sister Danielle Dybowski, grandparents Toni and Gary Dybowski (Tonya) and Evelyn Freeman, aunt Barbara Dybowski and cousin Kaitlyn and Scott and Susan Hays. He is also survived by a large extended family. He also leaves behind his best buddy nephew Maddox Buchner. Dax loved hanging with his Uncle Eeek playing video games, jumping on the trampoline, swimming in the pool and shooting hoops.
Erik is predeceased by his grandparents Howard and Virginia Porter and grandfathers Bert Powell and Richard Freeman.
Erik overcame a huge obstacle in his life 10 years ago when he successfully rehabilitated open heart surgery due to a genetic heart defect. It was a tremendously hard road but with Erik's perseverance and positive attitude, along with his strict physical regimen kept, he was able to recover and lead an active life. The family asks that we all remember Erik as a kind and gentle soul with a unique way about him that would go above and beyond to help anyone in his close circle of friends and family.
